A limited edition fusion of two fruitwood timbers that separately are notoriously difficult to turn into charcoal.
We have combined Wild English Cherry (Prunus avium) with English Apple (Malus sp.), to produce a charcoal that exhibits the amazing characteristics of both timbers:
Apple - The charcoal is dense and long burning, highly carbonised with rich-smokey fruit & distinctive aromatic notes that will give a great flavour.
Cherry - The charcoal has a sweetness that your might expect from a fruit wood as well as a darker cherry flavour. It will hold it’s own against game, and is exceptional with a duck breast or nice piece of venison.
The cherry in the current batch is from my family’s joinery business that closed down many years ago and has only recently been discovered in planked format.
